Kilkenny Waterfall - Irish Whiskey Cocktail - June 2026

Picked up this recipe during our IWSAmerica member group trip to Kilkenny. The Kilkenny Waterfall is a fruity profile cocktail and makes for a perfect summer drink. County Kilkenny is home to two prominent waterfalls, Kilfane Glen and Waterfall and Poulanassy Waterfall.
- 1 1/2 oz Kyteler's Inn Irish Whiskey
- 2 oz apple juice
- 1/2 oz pineapple juice
- 1/2 oz blueberry syrup*
- 1 dash cherry bitters
INSTRUCTIONS
- Combine ingredients in shaker with ice
- Shake until cold
- Strain into rocks glass with new ice
- Garnish with blueberries (optional)

Kyteler's Inn is a pub located in the heart of Kilkenny city. Their pub bottle is a collaboration with W.D. O'Connell Whiskey, a blend of single malt and single pot still matured in ex-bourbon casks. This whiskey provides a good base spirit (without sweet wine finishing) against all the fruit components of the cocktail.
*Blueberry syrup for cocktails is readily available at places like Total Wine; however, connoisseurs can make their own by muddling 6 fresh blueberries with 1/2 oz of simple syrup before adding the other ingredients
